Mediterranean Baked Fish

I was strolling through Trader Joe's for some bananas and yogurt.  Since we moved out, we need to come up with some recipes for dinner.  We're eating people's leftovers!  Okay, they're our parent's leftovers, but still...need something new.  I remembered we had some tilapia in the freezer, so I used trusty google and found a Trader Joe's recipe for tilapia.  I wasn't too sure on how it would turn out considering there was only one review.  Glad we took a chance!  Look how yummy this looks:

Ingredients
  • 4 tilapia fillets (thawed)
  • 1 Roma Tomato
  • 1/4 cup kalamata olives
  • 1/2 a small onion
  • 2 garlic cloves minced
  • 2 Tbsp chopped parsley (use scissors!)
  • 2 Tbsp olive oil
  • 1/4 cup white wine
  • 1/2 tsp salt
Steps
  • Preheat oven 375 degrees
  • Place fish in a single layer on a pan (pyrex or corningware work great!)
  • Mix in a bowl, tomatoes, olives, onion, garlic, and parsley.  Spoon mixture over the fish.
  • Whisk oil, wine, and salt.  Then pour over the fish evenly.
  • Bake uncovered for 25 minutes or when the fish flakes.
 Enjoy!

He really really wanted the Call of Duty game for PC, so I went to a couple Targets in search of it.  I was going to post how great of a deal I got on the game, but my math has failed me again!  The game is originally $60, and I thought I was only going to pay $32 for it. 

I've been using this really cool app - Shopkick.  You accumaluate points for walking into certain stores and then redeem them for giftcards, etc.  I'm collecting Target gift cards now.  I thought I was going to make it to the $25 gift card, but I was only half way there.  Darn!  So I just redeemed it for $10.  Each $5 gift card is 1250 shopkick points.  I used $10 on the game + $5 gift card from last time + a coupon to get $10 gift card on a $50 and over purchase + Target credit card (always 5% off).  So my total came out to about $60.  Did I lose you?  I grabbed a wine opener and doggie biscuits.  haha  so I didn't save anything at all!  I'm terrible at extreme couponing.  =P
