Ingredients
- 4 tilapia fillets (thawed)
- 1 Roma Tomato
- 1/4 cup kalamata olives
- 1/2 a small onion
- 2 garlic cloves minced
- 2 Tbsp chopped parsley (use scissors!)
- 2 Tbsp olive oil
- 1/4 cup white wine
- 1/2 tsp salt
- Preheat oven 375 degrees
- Place fish in a single layer on a pan (pyrex or corningware work great!)
- Mix in a bowl, tomatoes, olives, onion, garlic, and parsley. Spoon mixture over the fish.
- Whisk oil, wine, and salt. Then pour over the fish evenly.
- Bake uncovered for 25 minutes or when the fish flakes.

He really really wanted the Call of Duty game for PC, so I went to a couple Targets in search of it. I was going to post how great of a deal I got on the game, but my math has failed me again! The game is originally $60, and I thought I was only going to pay $32 for it.
I've been using this really cool app - Shopkick. You accumaluate points for walking into certain stores and then redeem them for giftcards, etc. I'm collecting Target gift cards now. I thought I was going to make it to the $25 gift card, but I was only half way there. Darn! So I just redeemed it for $10. Each $5 gift card is 1250 shopkick points. I used $10 on the game + $5 gift card from last time + a coupon to get $10 gift card on a $50 and over purchase + Target credit card (always 5% off). So my total came out to about $60. Did I lose you? I grabbed a wine opener and doggie biscuits. haha so I didn't save anything at all! I'm terrible at extreme couponing. =P
