A few recipes we tried =)

I saw this really pretty picture of Spaetzle and needed to learn to make it. It's an Austrian dish, and I was curious on the taste using only three main ingredients - water, egg, and flour.

The recipe on Smitten Kitchen required 7 eggs!  I dunno if I was ready to use that much, so I found an alternative recipe on All Recipes.  We paired it with the Ikea Swedish meatballs (so delicious!).  If I make Spaetzle again, I'd probably do a different side dish.  Swedish meatballs took away all the flavor from the Spaeztle.  It was a lot of fun to make though!  I did the holes in a ziplock bag method.   My hands ended up all gooey.  =P

We also made The Best Coffee Cake. Ever.  This was my third attempt at making coffee cake.  I've gotten recipes from Picky Palate and All Recipes.  For all the recipes, I'd like to cut the topping in half and add less sugar for the cake itself.  It's still super super sweet!  I love the texture of the pecans.  I think I'll have to add more of that in there.  =)

Shrimp Scampi - This one's a keeper!  We loved it so much, we made it two days in a row.  =)  Let the garlic brown more to get the flavor out.  Same with the wine.  Let it simmer a little longer.  We used frozen cooked shrimp, but it's probably best to use raw frozen shrimp.  Regardless, it was still delicious!  Definitely excited to have found this recipe.  We ate the shrimp scampi with linguini.  You can even dip bread with the left over sauce.   Mm...so good!

  2. She recommends an immersion blender. I wish we had one! We ended up wasting half the eggs because we had an accidental spill. haha it was a mess. =P
